There are two off-road companies working south of Las Vegas with names so close together that people book the wrong one. Vegas Off-Road Experience puts you in a Baja race truck on a closed dirt circuit at SpeedVegas. Vegas Off-Road Tours puts you in a RZR side-by-side on open Mojave Desert trails. Both are excellent and they're not remotely the same day out, so the useful thing here isn't a ranking, it's telling them apart. Vegas Off-Road Experience: you drive the race truck
Vegas Off-Road Experience is the one on a closed course, and it's the one with the jump. You get a real Baja race truck on a purpose-built one-mile dirt circuit at SpeedVegas, roughly 15 minutes south of the Strip, with banked turns, rolling terrain and a 60-foot tabletop jump in the middle of it. The setup is properly serious: full race gear including a head-and-neck restraint of the kind used in actual off-road racing, a classroom briefing first, then a professional sitting beside you coaching through an in-helmet intercom while you learn where to brake and how to handle the weight transfer over a jump. Friends and family can come and watch from trackside at no charge, which quietly makes it a decent group outing even when only one of you is driving.

Las Vegas Mini Off-Road Adventure: you drive, but out in the desert
Different company, different machine, different terrain. The Las Vegas Mini Off-Road Adventure is run by Vegas Off-Road Tours and hands you a Polaris RZR side-by-side on Mojave Desert trails rather than a circuit, so what you're buying is desert scenery and open terrain instead of lap times and airtime. The record puts the whole thing at around two and three-quarter hours with roughly an hour and a quarter of that actually on the trail. Helmets are radio-equipped and the vehicles carry Ride Command GPS, so your guide can talk to you the whole way, and you can swap drivers partway if two of you want a go. Photos, water and a light snack are included.

Ride Along with Our Guide: somebody else drives
Ride Along with Our Guide is the same company and the same Mojave trails with the pressure removed: a guide takes the wheel of the RZR and you take the passenger seat. That matters more than it sounds, because it drops the minimum age to 12 and removes the licence requirement, which is what makes this the workable option for a family. There are several tour options behind one booking, ranging from about 80 minutes up to a six-hour day, and the longer ones run out to Goodsprings with lunch at the Pioneer Saloon. Pick the option before you pick the date, because they are genuinely different outings.

Picking between them, and the transport trap
The short version: circuit and a jump, go to SpeedVegas. Desert and scenery, go to the Mojave. Somebody in the group is under 18 or doesn't want to drive, the ride-along is the only one of the three that works for them.
Now the thing that catches people out. Both Mojave bookings state that shuttle pick-up is not included, so you need your own way to base camp unless you call the operator after booking to add it, which they offer to groups for a fee. That is not a small detail when the alternative is a rideshare to a desert staging area. The SpeedVegas one has no such issue, but it does require closed-toe shoes and will turn you away in sandals.
